When a version of wine is listed as 'stable' it does not mean that it is more or less likely to have problems than a newer version, it means that the code will no longer be changing. Going back to the 'stable' version means you miss all fixes, patches, and improvements that have been added to wine since that version. In most cases it is best to get the latest development version, not the stable one.
