I'm on Ubuntu 11.10 using Open Sound System (OSS-v4.2-build2005) and it's working perfectly fine with the version you have and also newer ones. In fact OSS and ALSA are the only supported backends. As of Wine 1.3.28, Wine should select the correct backend for you. Maybe you have some old registry settings that are incompatible with new sound implementation. Then you should delete them as described in http://wiki.winehq.org/Sound
