There's already a bug about that issue. http://bugs.winehq.org/show_bug.cgi?id=11764 You shouldn't file a new one, it would be marked as duplicate and closed. Generally, it isn't wrong to file bugs for wine, the wine devs definitely read bugs. But I'm afraid, 5.1 sound doesn't have the highest priority.
