In general, after a "make install", about all that is left is making sure that /usr/local/lib (or wherever the main Wine libraries are installed) is in /etc/ld.so.conf, and that the ~/.wine/config file is correctly configured. Other than that, maybe copy over DLLs and fonts from a Windows installation if desired.
You forgot "merge in the registry".
I think Wine needs a better installation procedure, one that allows multi user install and easy RPM/DEB integration. Too many tasks and too little time.
