I have seen this behaviour but it was quite a long time ago and now I can't see it anymore, even on the same computer where I had seen it. At the time, I had never even read the code in graphics/x11drv/xfont.c, so I did not know where to look at. What the font code is not complex : it calls an X api listing all the X font names and calculates the checksum of all these names. This checksum is saved at the beginning of the cachedmetrics file. So theoretically, restarting the font build each time either means that the font list has changed, or that something has prevented Wine to save correctly the cachedmetrics file.
