bash -c "GTK_THEME=Adwaita:light remote-viewer spice://127.0.0.1:xxxx"

Did the trick.  Thank you!

Is there a value to use the "system's" theme?

Makes sense, I think the application should follow the system theme (if running on GNOME at least). I changed the theme using gnome-tweaks and it is always dark. At first I thought it was because I use the dark theme, but virt-viewer does not change to light theme as other applications do.

It is worth noticing that not all applications follow this rule, for instance, Eog and Boxes have the same behavior as virt-viewer.
Where would I go to ask for an Request for Enhancement
to make the theme configurable in settings?
Many thanks,
