The most likely cause for this error is that you built virt-viewer
against a newer version of spice-gtk, and you are now trying to run it
against an older version of spice-gtk which is missing some required
symbols. ldd, LD_LIBRARY_PATH, ... will be helpful if you are in such a
situation.
