Ah so - is a separator rather than a "this field is empty" marker. 
Confusing, to say the least. Either, -- should have been used as a 
separator (after all, users know _that_ from userspace), or
every field should have been prefixed with some KEY= (like in utab) or 
key: (like uuid: is already).
