Automatic is correct.  It means to search the list in the settings
for the first charset which contains all of the characters in your
message.

So if you want to use iso-8859-15 make sure it is first in the
list in settings and, as long as you don't use e.g. chinese characters
your messages will go out in iso-8859-15.

It sounds like you want the option to remain on iso-8859-15 instead
but that is not the way it works.  The option you are changing is a
one-time override.  For a permanent change just put iso-8859-15 first
in the settings list if that's what you want.
