Forgive my reply to a follow-up however I missed the OP.

Postfix is responsible for storing incoming (new) mail and so that's where
you need to be looking. In particular, check your home_mailbox directive -
it can specify the location of the user's Inbox relative to their home
directory e.g.

home_mailbox = Maildir/

The applicability of this setting may depend on what your mailbox_command
is set to (e.g. in case you are using something like Procmail to deliver
mail).
