For example, with cyrus, you could use a crontab that says :

5 0 * * * /usr/cyrus/bin/ipurge -f -d 30 user.\*.SPAM >/tmp/ 
purge_spam.log 2>&1
5 2 * * * usr/cyrus/bin/ipurge -f -d 7 user.\*.Trash >/tmp/ 
purge_trash.log 2>&1
