I'd forgotten that I'm actually not using sendmail - quite some time ago I switched to Postfix, with the Dovecot IMAP server. SquirrelMail worked fine with that setup until I changed my ISP... I've also attached the output of the SquirrelMail configtest script - it seems to think everything is fine....
