but in the *logformat *command, I cannot seem to work out what the square bracket is for?

When used at the beginning of a logformat %code name, a single square bracket character specifies a particular encoding algorithm for that %code values. To find documentation for that encoding, search for the words "Custom Squid encoding where percent" in recent squid.conf.documented or at
