Just diff you logs and you will see it.

The biggest there is C++11 support being enabled on CentOS. That alone
enables quite a few performance optimizations in the stdlib template code.

We have tested squid in Debian 10 and performance are now the same as CentOS 7

So Debian 10 should be the best choice but it is not released yet...
