RAM used for cache is a fixed number which does not change. There is not much point in monitoring it specifically.

It can be found in cache_mem in the config file, the cachemanager "info" report (squidclient mgr:info) next to "Storage Mem size:", and at SNMP OID 1.3.6.1.4.1.3495.1.2.5.1.0.
