Oh I got it, you just put daemon: in front of the log file name.

For the record the logging usage syntax (relevant to 2.7 and 3.2+) is currently at:
  http://www.squid-cache.org/Versions/v3/HEAD/cfgman/access_log.html


Seems not to work for the cache_log though.  (Not that we have huge
rotation issues with that one. :) )

No it doesn't. But yes my thoughts exactly.
NP: the daemon as bundled with 2.7 still does not rotate the logs without a "-k rotate", which retains the whole helper restart issues.
