Sorry for late reply.

There's no official single documentation. There are some documents (.odt)
under spice-server docs directory (not really up to date).
Surely about QXL device an up to date resource is qxl-dev.h header inside
spice-protocol spice directory, it contains all structures used by the device.
About the network protocol (server <-> client) you can find the file
spice.proto under the spice-common repository.
