How are you verifying that the user experience remains the same?
That there is no tearing, distortion, missing elements, etc.?

Indeed - but also take into consideration the number of messages (luckily, some of them are aggregated by TCP).
You can use the dissector in Wireshark to see (and count) the number of Spice messages (or add counters in the server, of course).

Which image compression is being utilized? 
Is the caching effective?
