When the source code is not released, which is the best field to put on ?Source RPM??
There is always a source RPM, even if you don't distribute it. "nosrc" means that the RPM was built from binaries, instead of compiled from source. However, there is still a "source" RPM, which would contain the tarball or whatever of binaries the RPM was built from. (For instance, mozilla builds of firefox can be packaged as RPMs - the nosrc.src.rpm contains the mozilla binary tarball.)
How can I avoid getting the %{name}-%{version}.src.rpm in my ?Source RPM? field?
You can't. I think your clients understand that the source must exist somewhere (or else they can't expect any updates or bug fixes).
