From what I read DSL may offer superior security to Cable Internet access given that Cable is like an analog "party line" and others on that line may be able to monitor what you are accessing and sending. Is this true?
As noted, mostly garbage FUD. Ask your provider if they encrypt your traffic, Comcast does.
If you treat everything you do on the internet as if someone is dumping your traffic (and you should), then there's no difference between cable and DSL.
When running a Shrike box as a server will I find one service to be friendlier than another?
Depends on the provider. I believe DSL is more likely to use PPPoE, which means more setup on your part.
We suddenly have both services available RoadRunner Cable and Verizon DSL and DSL sounds both cheaper and more secure. I also understand that during peak times the Cable speed advantage can vanish.
More FUD. No matter what technology you use, you'll always share your pipe with someone else. At some point along the line, traffic is aggregated. If your provider is paying attention, they'll provision enough resources to make sure everything works well.
Am I missing anything important in this evaluation?
Yeah, feedback from users in your own area. Ask people you know how often there are service problems and how well bandwidth is regulated.
