Install only text-based applications?

Hello.

I've got a machine on which I want to install all of the text-based 
application, but no Xfree86/KDE/Gnome/etc. graphical apps.  

In past versions of RHL I had to select Custom/Everything during the 
install, then manually deselect all the graphically packages I could 
think of and let the installer find the dependencies on those that I 
missed.

My (admittedly fuzzy) understanding is that selecting a Server 
installation will not install the user-oriented text-based applications.  
True?

Is there a way in the Shrike installed to simply indicate that I want all 
text-based apps and none of the GUI apps?  If so, how is it done?
