Use gnupg!
Configure gnupg, then in ~/.rpmmacros just put something similar to :

%_signature    gpg
%_gpg_name     Matthias Saou (Thias) <matthias.saou@xxxxxxxxxxxxxxxxxxxx>
(that _gpg_name is the one set in your gpg key)

And you'll be able to sign packages with :
rpm --addsign <rpm files>

Or directly when building packages with :
rpmbuild --sign <etc.>
