Like the other poster mentioned. Run a sniffer on your LAN segment. 

If you can run in an X environment, ethereal is a great package. I you don't
have the ability to run X, then try tcpdump. Something like:

tcpdump tcp port 25

would at least filter the captured traffic to tcp/port 25 in both
directions.

man tcpdump -or- man ethereal for more information on how to specify
filters.
