I recall having problems writing to my vfat partition. Apparently
windows doesn't support user ownership of files so the work around
given to me was to make myself a member of a group. Somewhere in the
following line there is a magic code or combination that lets me, as a
user member of the the vfatuser group, have write permissions to my
data drive.

/dev/hda5 /mnt/data vfat
auto,user,rw,gid=vfatuser,umask=002 0 0

I can't say that I understand the fstab entry but I do know that it
works for me.
