  xterm -e tail -f logfile

does it for me, without the highlighting. Actually, for multiple logs I use
the multitail command, which does a good and highly tunable job. And it
does highlight stuff. Eg:

  xterm -e multitail -M 10240 -b 8 -x 'MTAIL %t %f' ~/var/log/console /var/log/messages
