I was finally able to get around this, myself, to some extent. I needed to do a few other things, as well...once I'd untar'd, I needed to edit the /etc/fstab file, to point to the new partition/LV scheme. The other trick was, then, to disconnect all the drives, reconnect the new drive to the boot position, boot from the CD in rescue mode, and then grub-install to the boot sector. I tried running grub-install to the boot partition, but it didn't seem to take.
