I've been tasked to set up remote logging of all system logs from 16-18

general.

Has anyone else had to do this? If so, how many servers do you have
this for? If you had more than a few servers, how did you organize the
logs?

Have you considered syslog-ng ?? <http://www.balabit.com/products/syslog_ng/> You can store log information in syslog files or sql. A commercial alternative called Splunk <http://www.splunk.com> is becoming popular as well.
