The usual way to do this is with Red Hat's kickstart file, specifying the stuff you want to do as the %postinstall section. When anaconda's done installing the OS it will wait for someone to select the "reboot" option. Or at least it can depending on what you put in your kickstart. Inside /root/ you'll find a file anaconda-ks.cfg which can be used as a starting point...
