Yes, there are such things - there are various solutions, commercial and
otherwise.

Expect is pretty useful to create automated command-line sessions.

Does such a thing exist for GUIs?  I want to create a script
that opens a vmware session.  Once the OS boots up, I'm wondering
if I can automate the Windows login process (to log in to a domain).

(Just using the regular vmware workstation edition and not GSX or ESX.)
