I agree that software RAID would probably work best.  I think yiou could
also pull off a byte level rsync as well..but Im not
sure what that will do with the system soft links, and Im also not sure
if it would be bootable.

No, RH Linux has sofware RAID available.  There is a HowTo on doing it.
