I always use rsnapshot to backup. See here: 
http://www.rsnapshot.org/ 
maybe that will suit your need. 

Another option, use Mondo Rescue to backup to CD: 
http://www.mondorescue.org/ 

I found that either one of those (depends on your situation / need) is easier 
than manually tar directories. 

I found that 'dump' is not reliable in linux machines. I vaguely recall there 
is even a risk of corruption that was mentioned by Linus Torvalds in the 
linux kernel mailing list, so he deprecated that. I don't know what the 
situation with 'dump' is now though, so my statement maybe obsolete.
