writing system backup on a CD

Hello,

    I have the following file File system on one of our server.

    #df -k

    /dev/sda2              2016044    295064   1618568    16%         /

    /dev/sda1               101089     21205     74665    23%        /boot

    /dev/sda5              6048320   2045940   3695140    36%       /usr

    /dev/sda7              2016016     80940   1832664    5%        /var

    /dev/sda9             13693896   2352216  10646068   19%      /usr/diskx

 

    I want to backup up these FS and and burn on CD's. I am using Raid 1
    For these FS. But we had a controller crash and it took 3 days to repair
    the system. Now I would like to know which command I should use to ackup
    (dd,tar,dump,cpio etc.) and how I write these information to  CD's and
    make it bootable. So that next time I can have a system with a very
    short period.
    Iam new to Linux . So please give a detailed procedure if possible.I  
    Will appreciate very much your help.
