I run mutt and sendmail via a cablemodem provider.  I don't know if
Evolution uses Sendmail or not. 

For ISPs who do reverse IP lookup, I have these lines in
/etc/mail/mailertable:

aol.com         esmtp:mail.optonline.net
nyc.rr.com      esmtp:mail.optonline.net
rcn.com         esmtp:mail.optonline.net
earthlink.net   esmtp:mail.optonline.net
redhat.com      esmtp:mail.optonline.net
mindspring.com  esmtp:mail.optonline.net

This does the trick for me.
