We run one Windows Server 2003 and nine RedHat/Fedora servers on our
VMWare ESX server, and we are VERY happy with it. Everything works
reliably and fast, we can create new servers or upgrade old servers
without having to worry about hardware (since that is all virtual :).

The machine we use is a Dell PowerEdge 2600 with dual 3Ghz Xeon (1MB
cache), 4GB RAM and a RAID5 array using three 73GB 15k RPM disks. We can
add another set of three disks and max 12GB RAM, so we still have some
room to grow :)

This combination works great, but it is a little expensive..
