Anybody knows what I shall put in as SMTP server on the local maschines to relay emails through the linux server?
You put in the IP address or name of the linux server.
You will also need to make sure that the server will allow relaying in a way that is reasonably secure, so your server is not abused by spammers. Read my "Sendmail SMTP AUTH HOWTO" for one example of how to do so, which you can find at:
