It depends on the modem, but typically you use three +'s in a row:

"+++"  to get the modems attention, then you can issue AT commands.

The modem at the other end doesn't need to know about it (Unless you of course wish to alter the remote modem, which you need special modems and command sets to do.

Grab the modem manual as AT commands sets vary widely between modems and manufacturers.
