You could set up open relaying, but then every spammer in the world would use your server, and you would end up on every anti-spammer's black list. :) Seriously, check out SMTP AUTH. I believe that there's a PAM module for it somewhere that will allow your users to authenticate against user accounts on your server, and once that is done they can send email.
