So I got it working again by re-creating with --assume-clean just as you 
said.
I did not note down the S/Ns of the drives the first time around so I 
had to try my luck.

I'm spending the weekend on creating additional backups and reading more 
into this topic (on the kernel wiki) so I can safely create a good RAID 
array with partitions afterwards.
