After several tries on the overlay devices to be sure, I managed to
fix the array with mdadm --create --assume-clean --level=6
--raid-devices=5 --size=2930134016 /dev/md0 /dev/sd{b,c,d,e,f}1.
e2fsck reported no issues besides a bunch of harmless "extent tree (at
level 2) could be narrower", so I'm quite happy with the result. The
reshape to add the additional disk is now in progress and going
smoothly.

I'm still curious though what could have been behind all of the resync
log messages I was getting.
