I'm not sure I am the best person to ask.  I tend to learn by reading
source materials (source code, technical papers, etc) rather than text
books, so I have no experience of reading a RAID text book and finding
it useful or not.  Possibly others on the list might have experiences
they could share.

However, having said that, I can recommend

  Managing RAID on Linux
by Derek Vadala, published by  O'Reilly

I know about it because I helped with the technical review.
It is reasonably well balanced with general introduction material,
some technical details, and some practical sys-admin guidelines.
It is certainly an adequate text, and may well be a very good text.
