For two reasons. 1. Pulse does not currently support *recording* from BT devices (tho initial patches are available for this so it will come soon). 2. Skype does odd things with alsa and does not work nicely with the alsa->pulse plugin. The correct way moving forward is direct pulse<->bluez integration which is where all the development is focused. GUI tools already work this out automatically without need for hacking config files.
