The command line looks good as far as I can tell. If you use pacat you don't need the gstreamer package. Have you tried to do it this way: $ gst-launch pulsesrc device=alsa_output.usb_device_d8c_c_noserial_if0_sound_card_0_alsa_playback_0.monitor ! queue ! audioconvert ! wavenc ! filesink location=out.wav Take care that there are no line breaks, after you copied the command line to the terminal.
