Understanding how to use the samples, and some other beginners questions

Hi,
Now that I've built pjsip on Mac OS, I would like to find the way to test a full duplex voice communication, maybe starting with the programs in the samples directory, if there are suitable ones.
My "long-term" goal is to build a server that can accept a connection (connections will arrive from an asterisk server), and does some audio processing on the incoming audio. So if I knew how to code a basic an "echo" server, I could implement my signal processing logic there, and my project could get to its conclusion very quickly.
So I wonder if among the sample programs there are some that can put me in the right direction for this kind of echo server, and also an example phone to connect to the server and test its functionality. testing will be made on localhost. 
If there are not, I wonder if there are some that let me test this kind of scenario at least partially, before starting coding the whole thing myself.
