using RTP independantly from SIP

Actually it's quite easy. SIP negotiates the codes, IP adresses, port numbers.
Uf you know these parameters you can start Gstreamer's RTP plugins and hand over
these parametesrs in the command line. It's well documented and I use this to
check and test some RTP related stuff.
