I have a open source project that I am porting to the iPhone and it has SIP support, you can go to http://opensource.mrgeckosmedia.com/?a=tree&p=VoiceMac&h=7884e6e1fcf02d9483f30a09ecfe544ea253d9c4&hb=7a586f0eb1934d9b894c197bfdf424380afc195a&f=SIP to see my script that compiles it for the iPhone and you can also download the project to see how I include it into the xcode project. If you like, you can also use my wrapper for cocoa, keeping my copyright, and easily implement PJSIP.
