I hope I understood you right... I would use PCREs:

function getdomainname($string)
{
    $pattern = '#(([[:alnum:]]+)(\.))?(.+)(\.)([[:alnum:]]+)#i';
    $replace = '\\4';
    return preg_replace($pattern, $replace, $string);
}

$var = $_SERVER['SERVER_NAME'];

echo getdomainname($var);

?>
