As Hari said, PHP supports many methods of input and output. The GTK GUI
extension is just one of them.
As PHP allows command line access, both from and to the O/S shell, the
options really are endless.
However, you do appear to be looking for a solution that has no problem.
Perhaps you should come up with a project and then see how PHP can best fit
it, rather than the other way round.
