SMTP mail server

How do I specify an actual SMTP server?  (Like mail.host.com)

This is what I have so far:

mail($email, $subject, $message, $headers);

I was to http://ca2.php.net/manual/en/function.mail.php and saw this
syntax:

mail ( string $to , string $subject , string $message [, string
$additional_headers [, string $additional_parameters ]] )
