For win i'm using Macromedia Dreamwaver, it's not free, but it has great interface with servers not on your own PC, i'm using several different servers, and i have them all listed in Dreamwaver. I click on a file on one of the servers, and it loads, and when i press save, it saves directly to the server (even if the server isn't in the LAN, it can save through FTP automatically). For linux i prefer Kdevelop :), nice free and buitlin with KDE, which a lot of distributions use...
