Thanks so much for your suggestions and offer to help with this.
For this round of changes I’ve downloaded the free version of Acrobat and have successfully edited the document; I was planning for changes that will happen in the future by asking about bringing the text boxes into PS.
As I’ve been cruising though the apps on my hard drive I realize I have a very old version (3) of Illustrator which will allow me to get into the PDF and edit it. That should suffice.

I know you can select a file in bridge, right click and select “open in photoshop”... also a thought, I have acrobat and PS. Maybe I could open it in Acrobat and export it as a PSD file or as a text document.
Doesn’t Open Office have a free PDF editor? I’ve been tasked with updating a menu which was created as a PDF and as I don’t have either InDesign or Acrobat—and I’m trying to avoid a paid subscription to either one—I’m curious if anyone can tell me if it’s possible, and if so how, to bring all those PDF text boxes into PS.
I know PS isn’t ideal for this kind of work but I have used it for other text-heavy layouts with great, if not tedious, success in the past.
